Salad with methi chicken

Ingredients:

For methi chicken:

chopped chicken - 1 breast piece
dry methi - 1/2 cup
chopped garlic - 2 tsp
crushed red chilli - 1 tsp (or 2 tsp if you want spicy )
crushed coriander seeds - 2 tsp
salt to taste
oil 1 tbsp

For salad:

chopped lettuce - 1 cup
sliced carrots - 1/4 cup
chopped bell peppers - 1/4 cup
(you can add whatever veggies you like in salad)

salad dressing (you can buy salad dressing from store or you can use the juice from methi chicken)

Preparation:

1. Marinate all ingredients from methi chicken for 1 hr.

2. Take a pan, let it heat. Now add marinated chicken into pan and fry it for few minutes.

3. Now your methi chicken is ready to serve with salad.

4. Take a plate, add your salad ingredients  and salad dressing or juice from methi chicken.

Enjoy your salad with chicken.

Fried Rice

Ingredients:

Cooked rice - 1 cup
chopped mixed vegetables - 1 1/2  cup (carrots, broccoli, cabbage, cauliflower, peppers, green peas, corn)
tofu or paneer - 1/2  cup
chopped onions - 1 tbsp
chopped green chillies - 1 tsp
chopped garlic - 1 tsp
ground black pepper - 1 tsp
chopped coriander leaves - 1 tbsp
chopped green onions - 1 tbsp
oil - 2 tbsp
garam masala - 2 tsp
salt to taste

Preparation:

1. Take a pan and let it heat. Add oil to it.

2. Add garlic, onions, green chillies. Fry it until onions turn into golden brown. Now add mixed vegetables, tofu and fry them until they cook. Add little bit of salt.

3.  Now add rice and mix well. Add little bit more salt, garam masala and black pepper to it.

4. Mix well and garnish with green onions and coriander leaves.

Broccoli and Egg Frittata

Ingredients:

chopped broccoli - 1 cup

eggs - 4

red chilli flakes - 1 tsp

black ground pepper - 1/2 tsp

salt to taste

butter - 1 tsp

Preparation:

1. Take a pan and let it heat then add butter and broccoli.

2. Fry it until it cooked.

3. Beat the eggs in a bowl with salt , pepper and chilli flakes.

4. Now add the eggs onto fried broccoli, mix it, close the lid and leave it on a low flame until it is done.

Now serve the Broccoli egg frittata with fruits for your breakfast.

Fish wrap

Ingredients :

Roti - 2

Chopped lettuce - 1 cup

chopped cucumber- 1/4 cup

chopped carrots - 1/4 cup

fried corn - 1/4 cup
  • fish boneless - 1 large piece
  • oil - 3 tsp
  • mayonnaise - 1/2 tsp
  • For seasoning:
  • ginger - 1 inch
  • garlic - 4 cloves
  • chilli powder - 1/2 tsp
  • coriander powder - 1/2 tsp
  • cumin powder - 1/2 tsp
  • lemon - 1/2
  • coriander leaves - handful
  • salt to taste
Preparation :

1. Grind all ingredients from seasoning and marinate the fish with the seasoning for one hour before.

2. take a pan, add some oil and fry the fish.

3. Mix all vegetables with mayo.

4. Take a roti, add vegetables in the centre and add fish slices on top of it. Add remaining oil from the pan, it gives nice flavour.

Now your fish wrap is ready. Enjoy it.....

Vegan Salad

Ingrediens:

Chopped Lettuce - 1 cup
chopped cucumber - 1/4 cup
chopped carrots - 1/4 cup
chopped red or green peppers - 1/4 cup
cooked corn - 1/4 cup
chopped tomatoes - 1/4 cup
chopped strawberry - 1/4 cup
sugar - 1/4 tsp
mayonnaise - 1tsp



Preparation:

1. Add sugar to strawberry, mix well keep it a side.

2. Take a bowl, add one layer lettuce, carrots, cucumbers, peppers, tomatoes, corn and add strawberry along with sugar syrup that came from strawberry.

3. Finally add some mayonnaise,

I didn't use any special dressing for this salad. Coz, every vegetable has it own taste. Lettuce will give tiny little bitterness, cucumbers gives crunchiness, carrots and corn has its own sweetness, peppers are sweet and bitterly, tomatoes are sourness and strawberries along with sugar gives a nice sweet and sour taste.  

Each bite of all veggies we don't need any other dressing. Every veggie has it own dressing.

Fish Curry with Coconut milk

Ingredients:

Fish - 1/2 Lb
chopped garlic - 1 pod
chopped onions - 1/2 cup
ginger garlic paste - 1 tsp
coconut milk - 1 cup
chopped green chillies - 2 tsp
coriander powder - 1 tsp
turmeric - 1/2 tsp
red chilli powder - 1-2 tsp
salt to taste
chopped coriander leaves - 1 tbsp
chopped green chillies - 1 tbsp

For Seasoning :

oil - 3 tbsp
mustard seeds - 1/2 tsp
cumin seeds - 1/2 tsp
fenugreek seeds - 1/4 tsp
curry leaves 
cinnamon stick - 1
cloves - 5
(I prefer to use cinnamon and cloves powder )

Preparation :

1. Take a pan , add oil and let it heat. Now add the items from seasoning.

2. Add chopped garlic, onions and wait until onions turns into golden brown. And then add ginger garlic paste, coriander powder and fry for a little while till oil comes comes out.

3. Add salt, turmeric, chilli powder, chopped green chillies (you will taste the chilli bites while you are eating and it gives a little kick of spice) and coconut milk. Let it cook for 1 min and add fish and let it cook on low flame.

4. At last garnish with coriander leaves and green onions.

It goes well with roti or rice.

Omelette Manchurian

One day I was craving for Manchurian recipe. I don't have chicken or gobi to make any other recipe. So I tried with eggs and it was yummy.


Ingredients:

Eggs - 3
chopped ginger - 1 tsp
chopped garlic - 1tsp
chopped green chillies - 2 chillies (optional)
chopped onions (long slices) - 1/2 cup
chopped red and green peppers - 1/2 cup
chopped green onions- 1/2 cup
chopped coriander leaves -  1/2 cup
soy sauce - 1/2 cup
chilli sauce - 1/2 cup
ground black pepper - 1/2 tsp 

Preparation:

1. Beat the eggs and make a nice omelette.
2. Take a pan, add some oil and let it heat.
3. Now add chopped ginger, chopped garlic, chopped onions, chopped red and green peppers.
4. Let them fry before onions turn into golden yellow.
5. Now add chicken balls, soy sauce and chilli sauce and fry a little.
6. Finally for garnishing add chopped green onions, chopped coriander leaves and ground black pepper.

*If you want to make gravy, take a tsp corn starch and mix it well in water. Add this to the pan before garnish.

It goes well with ginger rice, roti, fried rice or as a starter.
