Ingredients:
skinless chicken : 1kg
chopped onions : 3 cups
green chillies : 2 to 3
cashews : 1 cup
chopped tomatoes : 2 cups (optional)
grated coconut(fresh or dry) : 3 tbsp
cumin seeds : 1 tsp
ginger garlic paste : 2 tbsp
red chilli powder : 2 tbsp
turmeric powder : 1/2 tbsp
coriander powder : 2 tbsp
freshly grounded pepper powder : 5 to 6 tbsp (as per your spice range)
salt to taste
fresh coriander leaves chopped : 1 cup
curry leaves
oil -1/2 cup
Procedure:
1.Heat the pan on medium heat and add oil and add cumin seeds( save 2 tbsp oil for garnishing).
2.Add onions, cashews and fry until they turn golden brown.
3.Add ginger garlic paste and fry it for 5 to 6 mins.
4.Add chicken, turmeric, red chilli poeder, coriander powder, salt and mix well, keep the lid and let it cook for 15 mins.
5.Remove the lid and fry until water dries and up to chicken and masala looks like chocolate color.
6.Now add coconut and pepper powder and fry it for 5 mins.
For garnish,
1.Keep the curry in a serving bowl.
2.Take a small pan put some oil and add chillies, curry leaves.
3.Now garnish pepper chicken with coriander leaves and fried chillies and curry leaves.
