Ingredients:
Zucchini - 1cup (cut into small pieces)
Chopped Onions -1/4 cup
oil - 1 tbsp
Peanuts - 2 tbsp
dried red chillies - 2
coriander seeds - 1 tsp
cumin - 1 tsp
turmeric 1/2 tsp
salt to taste
For seasoning:
Dry roast peanuts, dried red chillies, cumin and coriander. Grind them and add salt. Keep it a side.
Preparation:
Take a pan, let it heat a bit and add oil, onions. fry onions until it turns into golden brown and then zucchini and turmeric. Fry it and keep flame in medium and close the lid. After 5 mins add the seasoning that we made above, mix it well and close the lid. Turn off the stove after 5 mins.
It goes well with rice and roti too.......
When i cooked it for the first time, my husband ate the whole dish and I was standing still watching him eating.
